Here's the recipe I use for my organic chocolate chip banana bread:
- 2 cups organic all-purpose flour
- 1 ½ teaspoons baking powder without aluminum
- ½ teaspoon baking soda
- ¼ teaspoon Himalayan salt
- ½ teaspoon ground cinnamon (I probably did a little more)
- ⅛ teaspoon ground nutmeg
- 2 organic eggs
- 1 ½ cups mashed ripe bananas (5 medium)
- 1 cup organic sugar
- ½ cup organic extra virgin olive oil
- 1 cup chocolate chips
- Preheat oven to 350 degrees. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a medium bowl, combine eggs, bananas, sugar and oil. Add egg mixture all at once to dry mix.
- Stir until moistened. Mix in chocolate chips.
- Pour into bread pan (7 ½ x 3 ½ x 2- inches)
- Bake for 50 minutes or until fork or toothpick come out clean from center. The oven you has everything to do with how long you bake it. If you have a convectional oven, it may be around 40 minutes. Just check on it after 40 minutes regularly.
